Sweet, tangy beans with bacon and jalapeño.

Equipment
Smoker or indirect covered grill; large ovenproof pot; stovetop
Timing
15 minutes prep + about 3 hours smoking
Yield
10 servings

Ingredients

Thick bacon: 8 slices, chopped Canned great northern beans: 60 oz Brown sugar: 1 cup Garlic: 4 cloves, chopped Sweet onion: 1, chopped Jalapeño: 1, seeded and chopped BBQ sauce: 1 cup Molasses: 1/4 cup Ketchup: 1/4 cup Dijon: 2 tbsp Cider vinegar: 1/4 cup Worcestershire: 2 tbsp Vegetable oil: 2 tbsp

Let’s get cooking.

1. Prepare indirect smoke at 225°F. 2. Heat oil in a large ovenproof pot. Cook bacon until fat renders, then lift it out. Soften onion, garlic and jalapeño in the drippings for about 5 minutes. 3. Return bacon and add beans and remaining ingredients. Mix thoroughly. 4. Smoke uncovered for approximately 3 hours, stirring hourly, until bubbling and thickened. Add a little water if the beans become too dry.
